The University of New England in Armidale, Australia adopted Moodle back in August [source] and opted to jump right to Moodle 2.0. Their contractor, Netspot, has the site up already and Myles Carrick (@mylescarrick) has created a very nice theme; you can see it by going to http://moodle.une.edu.au/.
It’s nice to see a few Moodle 2.0 sites popping up despite the fact that 2.0 has not been officially released.

Quick clarification on this post – although we (NetSpot) are supporting UNE’s Moodle deployment project and hosting their Moodle instance, we didn’t develop the very cool 2.0 theme.
I believe (and I’m sure he’ll correct me if I’m wrong) that it was done by Myles Carrick, Moodle guru and now Project Manager for the UNE Learning Platforms project.
